  Tastes like
  Bright lemon and apple, juicy acidity that turns up the volume on the crisp fruit. Tasty oak notes, sweet spice, vanilla and butterscotch. Balance and finesse, with a long finish.
  Pairs with
  Roast birds or pork, poached salmon, root vegetables in goose fat, lots of beets and parsnips. Or just a bowl of popcorn. This wine has the purity to go with a variety of foods, from fish to fowl and everything grown in a field or forest.
  Good for
  Sipping: Pure joy in a glass, with balanced citrus and apple, spice and acidity. Dining: The wine loves food, and vice versa. Complex, textured and full of verve to take on the complex and earthy flavours of fall.

  Why we're drinking this
  Flat Rock is helping to define Ontario Chardonnay and the Rusty Shed is the scorecard. We’ve loved past vintages, like the stunning 2013, which was a National Wine Awards of Canada platinum medallist. Pure fruit, prominent but judicious oak — and somehow they seem to have infused pure joy into the bottle. There must be some magic in the vineyards. In fact, there is and it comes honestly from their sustainable practices, such as using gravity-flow systems to reduce energy and maintain non-mechanical interference when it comes to handling the juice that eventually becomes wine. The Rusty Shed Chardonnay is what it is: a really great wine made by really great people.

  Tasting note
  Bristling with lemon and fresh apple, with underlying spicy baked apple pie and butterscotch. Sounds like a big wine but it isn’t. It’s mid-weight and spritely acidic, almost lean when you think about it. The oak is prominent, but it’s somehow not intrusive. It’s like a cozy, warm blanket on a big, soft bed. Best of all, it’s tasting beautifully now in its young-and-fresh form, and will evolve gracefully even in the next few months into a more supple and complex gem. This is a very well made wine with vast potential.
