Why we're drinking this
If you’re going to drink Australia Cabernet Sauvignon, it may as well be from the Margaret River. This is where Cab gets down and dirty in Aussieland. Warm days give way to evening cooling influences from the Indian Ocean. It’s a maritime climate, similar to the river effects we see in Bordeaux, where Cab Sauv is king. Ringbolt is a regular fixture at the LCBO, and consistently good to very good. There’s personality in this wine, and tons of flavour. Very well made. It should age nicely for a year or three.
Tasting note
Perfumed, robust notes of eucalyptus first, then plum and cassis, strawberry, blueberry. Spicy cinnamon hearts, sweet clove and black pepper. The nose is very pretty, and the flavours deliver on that promise. It is a bit hot (the label says 13.5% alcohol, the LCBO has it at 14% on its website, and we bet it’s even higher). That alcohol does unsettle the wine a bit, but the ripe fruit carries it along; the acidity too. Concentration abounds here. Cocktail it, or get the fine linen. This wine can take you from the porch to the dinner table. It’ll want big meats, stews or, even better, a ½ pound burger with blue cheese.
