Why we're drinking this
We love bubbles—and this remarkable sparkling wine is one of the best bargains of the LCBO, even without the buck off. This wine is a Cava—literally translated as “cave,” where the wine is aged. This is the Spanish version of champagne, albeit in a lighter style and at about one quarter the price. Cavas are produced in the same “traditional” method used in Spain, but using native Spanish grapes rather than the (mainly) Pinot Noir and Chardonnay of Champagne. Keep a few of these around and crack them open to make any moment a celebration. OK, that sounds hokey, but really, isn’t every moment worth a glass of sparkling?
Tasting note
This is a beautiful, bright pale lemon with robust bubbles pinging around the glass. Lovely to look at, but you’ll want a taste right away. Expect soft citrus, more grapefruit than lemon in this bottle. This wine is a blend of vintages, designed for consistency year to year but with some obvious variations. Past versions have been more yeasty and toasty, with pronounced apple and lemon; whereas this bottling is much lighter, crisper and subtle. This has a lovely mousse, soft, refreshing. The finish is just a hint of savoury dried herbs, buoyed by more citrus. Really delightful, eminently quaffable, perfect for August.
