Why we're drinking this
We’re big fans of sparkling wine, and not just for occasions. We keep a couple on hand at all times. Often, given the choice to continue drinking a sparkler with the meal or switching to still wine, the consensus is “more bubbles please!” This wine is a Cava from Spain—Cava being the name given to wines from (mostly) the Catalonia region of Spain that are made using the “traditional” method that is also used to make Champagne. It’s a delightful sparkler.
Tasting note
The light salmon colour is immediately inviting. That’s the Pinot Noir skins giving just a little blush of colour. The wine is super dry, crisp and delicately perfumed with a hint of strawberry and red fruit. There’s plenty of acid, but it’s not austere. This makes it very refreshing. The finish tightens up a bit, with a nice palate-cleansing bitter edge. It’s not a complex wine, just a simple and very quaffable sparkler that’ll jazz up any gathering. Just find an excuse to open a bottle, and enjoy. Repeat as needed.
