  Why we're drinking this
  Okay, even if winter and all its holiday cheer wasn’t on its way, we’d still be loving this gem of a Cabernet Franc. We love that it smells a bit like Christmas — exotic spices, herbaceousness, a hint of smoke — for that extra little lift of joy. But, man, it’s a pure and delightful wine — the essence of really fine Ontario Cabernet Franc. No surprise that it comes from Tawse, a multiple winner of Canada’s best winery. They’re organic, biodynamic and fantastic. So there you go. And winemaker Paul Pender always works a little magic. With a respectful nod to the ways of the Loire, this is definitely a modern approach, with a bit more herbaceous character and cedar/savoury qualities.

  Tasting Note
  Super clean and perfumed nose of exotic spices (cardamom, nutmeg, frankincense), black berries and fruit, violet and a delicate whiff of tobacco. Yep, that’s Cabernet Franc all right! Lots of layered flavours keep you coming back for more. Intense, with lovely acidity, nice balance, firm tanins and long finish. It’s a bold wine, though refined and approachable. Good for combating the winter chills.
