Tastes likeCherry and kirsch, blueberry, licorice and soft leather. Sweet spices and savoury/herb notes. Firm tannins and a long finish. Pairs withSlow braises, grilled lamb or beef, bison, brisket, meatloaf and shepherd’s pie. Roast lamb with olives would be ideal. Or some game birds. Good forSavouring lovely maturing flavours—fresh and dried fruit, earth, leather, herbs—along with the complementary aromas of fall.
Why we're drinking thisIt’s a real treat to be able to drink a wine that combines the fresh, ripe fruit of a great vintage like 2012 with some maturing notes gained from bottle age. And this is a textbook Cabernet Franc-forward wine, a style we do so well in Ontario. Brambly red and black berries, savoury and herbal elements, a touch of earth—beautiful structure with just enough grip. It’s a yielding, supple wine, just shy of full-bodied. Way to go, Niagara College Teaching Winery! A-plus all around!
Tasting notePretty fresh fruit aromas—black and red berries, cherry, plum—and dried herbs, soft leather and tobacco. Supple, medium weight and lively in the mouth, well-balanced with good acidity. Fresh and maturing fruit, a touch of raisin and almonds. Lovely structure and just the right amount of grip. Tannins are ripe and soft. Long finish.
