Cave Spring Cellars 2015 'The Adam Steps' Riesling (Reg. $24.95):Named after a series of limestone outcrops ascending the Niagara Escarpment above the Cave Spring Vineyard - known as ‘The Adam Steps’ - this wine originates from a parcel of vines nestled on the hillside just below this unique formation. Defined by great tension between fruit and acidity, this vintage of The Adam Steps shows just how concentrated lower alcohol Riesling can be in our region.
Back 10 Cellars 2015 'The Big Reach' Riesling (Reg. $22.95):This low yield Riesling was carefully harvested by hand under optimal conditions. The grapes were pressed whole into “free run” juice and fermented cold with selected yeast. Off dry with an ideal 10 grams per litre of acidity.
Charles Baker 2013 Picone Vineyard Riesling (Reg. $35.20):From the mature Picone vineyard on Vinemount Ridge, this wine shows a great depth of character and is a wonderful follow up to the highly regarded 2012 vintage. The nose displays lemon curd with elements of petrol and a rocky minerality. Dry on the palate the citrus / mineral profile continues tied with crisp pears and fresh lees.

Skin + Bones invited twelve of Ontario's top producers to participate in a weekly showdown of premium Riesling for four weeks in May 2017. Each week guests tasted 3 different wines with a food pairing from a guest Chef, and then voted on their favourite. The top pick from each round will go through to the Grand Finale on June 6, where the winning winery will receive 6 months on the Skin+Bones by-the-glass wine list + $1000 donated to their charity of choice.
